Bursa Black figs are derived from the ‘Dürdane’ cultivar. Bursa Black is medium sized fig with a dark purple exterior and bright red interior. Bursa, Turkey is the centre of production of this variety which is consumed fresh. Like all other cultivars Bursa Black is not a self-pollinating fruit. Pollen from the male flower must reach the female flower for the fruit to develop. Black figs grown in Bursa are larger and darker in colour compared to those grown in other regions. Bursa Black is considered as the best fig for fresh consumption in the world for its shelf life, appearance, size, taste and juiciness. This cultivar is unique to the Bursa region which has a growing reputation on the global market. Bursa Black accounts for 90% of Turkey’s black fig production. 80% of the approximately 20,000 tons of annual production is exported.

Adana Black is the first variety to mature in Turkey. Maturation is much quicker compared to other regions mainly because of high temperatures and humidity in excess of 70%. Local conditions shorten shelf life which makes it necessary to harvest the fruit early in the morning. Early ripening means that Adana Black is the first to enter the market each year, fetching higher prices. This cultivar is mainly for the domestic market however a small amount is exported with air-freight.

Aydın has traditionally been Turkey’s centre for dried fig production however, the number of plantations growing early ripening black figs is expanding steadily. Aydın’s geographical location means that black figs from here reach maturation after the Adana crop and before the Bursa crop. Half of Aydın’s production is consumed in the domestic market while the other half is exported. Aydın Black is smaller than its Bursa counterpart and has a shorter shelf life.
